WThis is a simplified version of a beverage from a new menu. This is a batch prepared mix that is packed with essence of the Christmas time, making it excellent for hosting a celebration. Reserve the remaining cordial to use in morning drinks, desserts, or to mix another batch of bikinis.
The Bikini Cocktail
Makes enough for 10 guests
For the Clementine Cordial (produces 750ml)
300ml recently pressed clementine juice
200ml fresh lemon juice
500g granulated sugar
To make the Premix (yields 850ml, serving 10)
400ml premium vodka
100ml classic gin
150ml peach-flavored liqueur
200ml clementine syrup (from the recipe above)
Fresh cranberries, as a garnish
Mandarin essential oil, for finishing
Method
Making the Syrup: Combine the listed ingredients inside a pan, heat until it reaches a light boil, mixing to dissolve. After that, take off the stove and let it to cool fully. Decant into a sterilised bottle, close it and refrigerate it in the fridge, it will last for about four weeks.
Preparing the Batch Mix: Combine every liquid ingredients into a large bottle, allow it to infuse for an hour, then strain preferably using cheesecloth, to ensure it's fully clarified.
For serving: Pour 85ml of the premix into your mixing glass packed with ice, and stir carefully for one minute to chill. Strain into an cold coupe glass or equivalent, top with a few cranberries and complete it by giving it a light spray with the mandarin essence over the drink.
